And I didn’t miss the sometimes cloying sweetness that tomatoes bring to red chili. So here is my lightened-up version of white chicken chili. It can be eaten straight up by the bowl, over rice (preferably brown), or spooned into a whole-wheat tortilla. To make this dish creamy without any cream, I thickened it by mashing up some of the white beans. Combined with a tiny bit of reduced-fat sour cream, the mashed beans provide this impeccably slimmed-down chili with an unexpectedly luxurious texture. Good flavor and thickening ability aside, white beans also happen to be a powerhouse of good nutrition. They’re a terrific source of fiber which means this chili will fill you up and a very good source of folate and manganese. The list of ingredients in this recipe is longish, but good chili requires a fair amount of flavors.
Tewksbury schools to host Family Fun Night with Nutrition

The evening will feature a performance by Foodplay, a national award-winning, fun-filled theater show featuring fantastic feats of juggling, colorful characters, motivating messages, music, magic, and audience participation to turn kids on to healthy habits. Our goal is to extend nutrition education outside the cafeteria and promote/motivate kids to a develop a healthy lifestyle, Mugford said.We also want parents to see that the schools are serving healthy meals to their kids and eating breakfast and lunch ensures good nutrition. The night will consist of: Foodplay, a one-hour performance Smorgasbord of healthy items served on the menu — parent sampling Farm to school apple/pears Meet and greet staff and representatives Parent survey and comment table Donations to the Tewksbury Food Pantry Door prizes This is truly a collaborative effort and businesses in our community are supporting health and wellness through prize donations, Mugford said. Prizes for kids and parents have been donated by K-Mart, Merrimack Valley Pavillion, Balance Spa, Brooksby Farm, Orange Leaf, Pushcart Cafe and more. The grand prize is a new kids bicycle. There will also be face-painting and giveaways. Samples of nutritious foods will be served by Tewksbury Public Schools Food and Nutrition Services.
